Hello,
I've been running an experiment using a slightly modded Orion giving it Sgreen on their triple barrel turrets.
Trouble is that they never seem to fire at the rate I expected but rather like if it was one gun, just from one random barrel at the time, like if the ship had to recharge its energy reserves before firing again.
Is there a setting that should be changed somewhere?

It sounds like you want to enable salvo mode (http://www.hard-light.net/wiki/index.php/Subsystem#.22salvo_mode.22) on the turret.

Salvo mode works, however there's something weird: turrets seems to be firing at a much shorter range than expected.
What could be causing the issue?

The AI will use the shorter value of the weapon's range (if specified at all; since it's only used by the AI, most weapons don't), or its lifetime multiplied by its velocity.
Yes, even for beams.

No, what I mean is that I tested the same weapon (Bgreen) on turret VS side and it seems to be firing at least 1K shorter than the normal range.

Meaning on the triple-gun turret vs. a side-mounted turret? This is going to sound dumb, but how far apart are the turrets?

It's the standard Orion model, so it's certainly a lot less than the difference (approx 2K)
