What hardware do I need to run FS2 Open maxed out at 1080p?
So I've downloaded all the mods for FS2 Open, and my computer is embarrassing enough that I can't run it at 1080p in all maxed out settings. I've been shopping for a new computer anyway; what would be the minimum I'd need in terms of graphics card and processor to do this? (Right now I have an HD 4000 (yes, I know, it sucks) and an Intel i7 3635).

By 'maxed out settings' do you mean shadows and everything? It's possible that no computer can run some of the newer code efficiently: it might not have been well optimized yet.

A good question... I suppose whatever the most popular and stable graphics mods are? Not familiar in detail with all the settings.

I have a 3.2 GHz Core 2 Duo, 4 GB RAM, and an old GTX480 with 1.5 GB video RAM, and have not had trouble running anything using MediaVPs 2014 at 1920x1080.  However, I have not played Blue Planet Complete yet, which I would think would be one of the more graphics-intensive mods.
Maybe someday God will give you a little pink toaster of your own.

With shadows, FXAA, and everything else enabled, my Radeon R9 290 gets somewhat down a bit in Icarus... but the lowest the FPS gets is ~25, so it's not exactly abhorrent performance.

I have one of those alienware alpha "desktop" things, and it fso runs fine on max settings at 1080p. I have to turn the asteroid detail level down if I'm running a pbr build.

Phenom X4 9500, 4GB RAM, Radeon HD 5770 - that's pretty much enough to play the older campaings (like almost everything that goes for FSPort) on maxed out PBR build with shadows and in 1080p pretty comfortably. But whenever an asteroid field is on the screen (or a lot of action), things get bad (~15FPS). I didn't try any newer mods (except BP :P), but I'm sure this PC needs at least the shadows off to run them smoothly.

The weak link is the CPU, it has low single-core performance, and FSO utilizes only one core.

I have a 290X overclocked to 1150 core and I can get around ~33 in Icarus but can easily keep a stable 60 in MediaVps retail. So you can run MediaVPs with a reasonably powerful modern card and a good processor(multicore doesn't help in FSO), but Blue Planet cutscenes are a bit too much. Maybe with a Crossfire/SLI setup you could make it do 50-60.

I'll tell ya right now an HD3000 doesn't cut the mustard. Unfortunately, other than Freespace, I have no excuse to upgrade my MacBook.

I hope they implement multi-core support soon.
