The Site Recon Mission is terrific:
My Alpha Team has no advanced Weaponry apart of a MEC Trooper and I had to take in two Rookies...end of the line: The Chrissalids swarm me to death -.-

Ouch.  I got that mission near the end of the game, when my team consisted of two MEC-3s, Annette, and the Furies.

You can just ignore that mission if it comes up at a bad time. It provides no real rewards beyond a slight terror reduction in Canada and XP, and there's no consequence for skipping it.

Never! Most do all the missions as they come towards you!

Then you would miss probably one of the best and most unique Council Missions offered.   

I was able to squeak past it on Ironman without any loses but it was a close run thing my team made it to the Ranger on the last turn.  Having two MECs, one of which is Jump capable, was key.

Sure, but if you know to skip it you've probably already played through it at least once. If it drops on month 1 ironman/impossible I'm gonna give some serious thought to skipping it (though at least it's not bomb defusal, thank ****).

Keep in mind it's quite possible to KSM all the Sharks beforehand, reducing your level of threat significantly.

You can Collateral Damage them too which is even faster (probably, it takes a lot of reloading) but if you don't have jumpy legs or a jetboots MEC you're still probably going to have to sac a rookie. It'd be more worth it early game if you got to keep all that chitin.

Using a Jetboot and KSM MEC I managed to get back from the ship to the evac point in four turns; it's not difficult if you're able to drop Chryssalids enough to keep their numbers down until you reach the ship.  If you go slow and kill all the sharks and things before you activate the nuke, you can fight as few as one or two a turn, and even in the first couple months that's manageable.

Experience.  Your soldiers may only be promoted one rank at a time, but you can farm two or three ranks' worth on that mission alone, and then they'll jump straight from Sergeant or whatever straight to Captain or Major in as many missions as ranks in between.
