Not sure what the deal is... I have all the ports forwarded correctly on my router(even put my machine on the DMZ) and have no problems hosting with other games.

Although I do get 'hacked tables' whenever I host straight from the game itself. I

I ignore the error and everything runs fine. Guess I'll keep trying new stuff. Only VPs I have in my main folder are the stock FS2 ones.

The culprits, everything but ships.tbl and weapons.tbl is trashed... I'm guessing there's new VPs besides the ones in the FSUP Beta Release thread?

Make sure you don't have your IP masked in your firewall.  Even if the ports are forwarded the other players need to be able to see your computer on the net.

Still does it even if I have Windows Firewall turned completely off.

It might be because I'm behind a router, my NIC is reporting an IP address of 192.168.1.123... , and the force IP address thing in the launcher just isn't working. So clients are trying to find my server by 192.168.1.123 rather than my real address that I put in Force IP address. I wish I had some way to verify

Ok wtf I don't get this...

I can actually see my game on the list if I use the debug build, but I can't if I use the regular build(although the number of games in the lobby is 4, I can only see 3 games). It works this way no matter which build I use on the standalone. I don't see why it would act this way.

You shouldn't have anything in force IP or port. 

What do you have in you multi.cfg and fs2open_pxo.cfg files?

Edit:

Well, going in the registry and deleting the force port and custom IP keys may have fixed it... I was able to see my game when I forced a different port on my client instance of FS2, though trying to join it crashed my game. Wasn't really expecting it to work. If anyone else can see it/join it let me know

Go to whatismyipaddress.com. That's where people are looking. You must ensure your router has forwarded all traffic on port 7808 to 192.168.1.123

Actually it hasn't.  This is only for running a standalones.  3.6.10 should work just fine otherwise even if you don't have a multi.cfg.
