Title: Compatible SEXPs between Multi and Single

Do most of the SEXPs that work in single player work for multiplayer? For example, I have noticed that a lot of campaigns using camera work ('set-camera-position', "reset-camera", "reset-fov", etc.).

Many of them do.  Not all.  There isn't a rhyme or reason for most of them; it depends on which ones are implemented and which aren't.
