I'm delving back into FSO for the first time since purchasing an ultrawide monitor. Will 21:9 stretch just the HUD or everything on screen? Would the behavior be the same in older mods (i.e. Diaspora)?

Depends on the mod. A few years back some new modding options were adding into the engine for HUD scaling, so if you modders incorporated those additions to their mods then there shouldn't be stretching of the HUD.

I work and play on 2560×1080. TBH it's quite annoying to have weapons or wings gauges displayed on the very edge because my sight is focused in the middle of screen. HUD elements also appear quite small in majority of mods, but nothing is stretched at all.

I could fit a minor amount of after effects panels on screen at once  :wakka: :D

Nice, that's the resolution I run too. It's an AW3418DW monitor. What mod is that BTW?
