How can I turn on the cockpit like in this video:

Also it seems like the TrackIR is used as well. How to do this?

To enable Cockpits that, you need a set of tbls. Read about it here.

To enable TrackIR support, you need to unpack this file and place the dll in your FS2 directory.

It's an SCP bug which causes cockpit glass to be rended from both sides.
I've made a workaround (and reported the bug). Unfortunately, I don't remember where I posted it.

Glass being rendered on both sides totally pissed me off when I was using Steve-O's old fighters with the solid cockpits.

I recall running into this during my WiH playthrough; I remember coming across the env map fix and trying it, but it never seemed to make a difference; I still found myself blinded a lot.

It'd be cool if there was an option not to render your own cockpit glass when in cockpit view. Sure, you lose the immersion factor of having glare off the glass, but it looks terrible IMO.
