I remember the Claymores from INFR1, but what are the more 'elite' fighters the EA has; i.e., what will be their 'best' fighter in Nostos?

That would be the Proteus which is their heaviest.

Is this the one at least in design?  (The comments imply it may be called EAF Proteus later..and that some secondary changes are needed because it has the Myrmidon's loadout right now)

Yup. Proteus is more or less, HTL shiny version of Donar with glowpoints, new textures and some changes in rear part of the fighter. Really cool design :].
