I remember someone made an additional model viewing/creating tool for the FS2 ships. Anyone know where I can get this(these?)

Well, theres modelview32, which is the standard one....
Theres PCS, which is, in my opinion, the best for converting etc..... You can get this one from Kazan's siggy I think.
Theres also Aurora in Bobboau's siggy which is a nice little editor with auto pathing, that saves a lot of time :)

there also is lithunwrap that you may want to check (check karajoma's tutorial's links), and also 3dexploration could be useful sometimes

I use segeltuch for exporting FS stuff to other games(Homeworld, HW: Cataclysm)

Well wouldnt Kazan or Bobbaou actually have to post somewhere for me to find these sigs? :(

You can search for posts by poster you know ;)
I know PCS is a little hard to find, none of the FS sites are linked to it. Aurora was a little bit unstable last time I used it but had lots of promise; I can't speak from experience but I've heard the bugs were mostly ironed out. Also check the SCP forum, both those guys seem to frequent there.
