yes I see that mod site and the other hardlight site with ships en stuff. what all can I do with them?

Ships that are released to the community are really only for use by people building campaigns. The idea is that a modeller builds a ship and then someone else comes along and use them in their campaign.

It is possible to swap the original [V] fighter for a mod with only a few minor changes but I wouldn't reccomend it as you can easily change the play balance of a mission that way.

If you want to try flying new ships try downloading Casualties of War or Inferno as both feature new player flyable ships.
