Why do Trek handheld phasers disintegrate people and make them disappear, but ship phasers don't make other ships disappear (even when shields are breached)?

Because if phasers blew peoples guts out and sprayed the wall behind them with blood, Star Trek would be certificate 18 ;)

Organic material vaporizes with much less energy then metal?

You're much more likely to kill a ship with secondary effects then with weapons, anyways. Internal explosions, fire, letting in the outside. It's been that way for as long as we've been shooting at ships, no reason it should change.

same reason why a shot from a tank with blow a person into bloody chunks but not a building.

person = squishy and 90% water

building = steel and concrete.

Well, to be analogous, it'd be shooting a person with a handgun compared to shooting a building with a tank gun.

still, deranium and titanium and other high tech super materials are alot stronger than the pink fleshy goo sacs a human is made out of.

Those just raise even more questions. :p One minute it tortures people; the next it stuns them; the next it just causes mild discomfort; then it's a lockpick; and then, finally, it increases hyperdrive speed if you shoot the control crystals. :p

Apparently, they can also make julienne fries (whatever that is). :p

Jullianne fries are  very thinnly cut french fries.

And a phaser is only an internal  combustion device. The govt. has known about them for years. It causes the methane gas inside you to instantly combust. So, if you don´t want to die a horrible death, start farting more often.

Phasers are based on the Rapid Nadion Effect, whereby energy is passed through a special phaser crystal resulting in a discharge of nadion particles, which are transmitters of the strong nuclear force. (often, the detection of nadion discharges is a key sign that a battle has recently taken place). Nadion particles have varying effects on the subatomic bonds of particles with which they interact, largely depending on the mass of the atom in question. To wit, dense starship hulls are more resistant to nadion discharges than is a humanoid lifeform. The disruptive effects of nadion discharges can be moderated to produce varying effects ranging from benign to extremely destructive.

Lasers use the electromagnetic force (light), which is the second strongest of the four fundamental forces. Phasers use the strong nuclear force, which is the most powerful: 137 times stronger than the electromagnetic force.
