If you're video card offers TV output and you have access to another computer which offers video input you could rig the two together and capture it that way though the quality would likely be shocking due to the appaling nature of PC graphics card video input and output hardware.
There are several tools that can capture your display but these too are limited in what they can capture being designed primarily to create demonstrations for training purposes.

Fraps (http://www.fraps.com/) looks as thougg it's designed for this purpose so may do what you want though I've never used it myself so I can't vouch for its quality.

If you're actually after the cutscenes rather than ingame footage take a look here (http://homepage.ntlworld.com/karajorma/freespace/movies.html)
The page is dedicated to getting the movies to work with FS2_Open but there's plenty of info in there on how to download or make your own avi copies of the cutscenes.

LOL, what's the hold-up? MVE cutscenes worked in the icculus Linux port of FS1+2 :p

(To this day I still have no idea how he managed that. My best guess is that maybe the MVL code from D2x was adapted for the purpose)

Don't use 3.6.5. There's a bug in it that stops movies playing. Any newer build should work.
