I know this is nooby, but:

Where are the .tbl files for FS2

They aren't in the tables folder.

If you're using Windows, download VPView from http://www.descent-freespace.com . If you're using Linux, grab 'Polonius' from the cross-platform dev forum. They will let you extract the table files.
