I've been trying to figure this out...can't so I need to post about it. I'm trying to run what is basically a clean FS2 installation plus the SCP additions from the website in the form of the various VP files. I have all of the VP files now and use all of them except for the music one which I don't hear enough of a difference to worry about.
The problem is the SC Cain...and I believe this is the only one.
A good portion of the ship is missing. Only one texture is shown while the rest of the textures are missing. I can't seemingly find these textures anywhere...I presume this is a new HTL model and that what I need to have is the textures for it. Am I doing something wrong ...or are they missing in the SCP VP files?

That's a classic missing texture issue. The model isn't new in any way but it is a variant (much like the leviathan and fenris are the same ship, but now with different textures) of the standard cruiser03 model. You're missing the x variants of the textures (though I'm not sure why, they should be in mv_textures with the model), which you should be able to find in another (more or less recent, not sure which) version of the media VPs.

Someone may want to try and make sure that the latest media VP file also has these textures if thats the case. I'm no newbie so this is now big deal for me...I can hack the tables if I want to. But if a new person to the game downloads it and then wonders what the heck is going on...it'll be more difficult.

Latest MediaVPs meaning the Delta version? I know it's come up before, and I think there's supposed to be a solution in the works, but I really can't remember offhand which version was supposed to fix it. You'll probably want to check WMC's gamma media thread in the FSU forum to make sure he's aware of the problem.

Good call...it occurs to me now that this post should be over in the other forum altogether. I will check out the Delta release and see if that fixes it. The website may have some older files...that may be the problem.
