So which fs2_open campaigns are really worth playing, and what are the good ones on the horizon?

Derelict SCP, Renegade Resurgence, Trascend, Pandora's Box, Inferno, Into the Depths of Hell, Revenge: Final Conflict, Just Another Day 1 and 2 and Deus ex Machina. This are the ones who are already out and the best ones in my opinion.

Don't forget about the Port, Homesick, "Shrouding the Light" and its prequel "Origins".

and you should be sure to try the Multi-only Battlestar Galactica: Beyond the Red Line release in mid-July

In short, find as many as you can.  Then proceed to play them all.   :D
