You're probably going to think I'm stupid but then I'll have to assimilate you, anyway;
Is it possible to destroy the Shivan ships on the mission were you first meet them, I've fired my stupid laser at them and several hornet missles but their shield stays up, is it possible?

It is.

It's possible, but not easy, personally, I took the 'Yaaargh!' approach, which involves using a combination of Lasers, Missiles and your ship on Afterburners to bring down his shields.

It is possible to destroy one. The rest leave before you have any chance of doing enough damage. I recommend Furies instead of guided missiles since you won't be able to lock on anyway - You can carry a ton of them, and unlike your primaries at the time, they can actually do fair damage to shields.
Even then though, it won't be easy.

That's how I did it, Furies and patience.
Also, make sure not to waste any time/weapons. Concentrate all fire on one quadrant. If you tail him closely, you can eat away at his aft shields and nail him before he jumps.

I got him with just the heat seekers and ML-16s on medium.

O man, I remember this mission. It was pretty difficult taking any of them down. Usually, all the Shivan fighters would jump out except for 1 who will remain for about 2-3 minutes. If you managed to keep all your wingmen alive, it'll be pretty easy to shoot him down. Try dual firing furys.

The missiles are key...you have to weaken the shields as much as possible so that the ML-16s can get through and do some damage. Also having the Disrupter in combination is better because it does a small amount of shield damage.

I killed it when it entered subspace but when the mission ended it said I should've killed one to boost morale.

Did they give you a medal for shooting 1 down? I don't remember.

Disruptor + ML-16 + Furies + getting in real close. I can kill one or two like this.
