I downloaded the Freespace Open Installer (apparently from 30.09.2007) and ran it and apparently it installed almost everything without problems.
The Problem that I know have is, that when I start the game with the FS2 Open Launcher 5.5c, all ships are missing their textures. Instead there are just gray/white placeholder textures on everything. I made the installer install everything, but still no textures.
I googled quite a bit, but found nothing about this problem. Anyone knows how to fix that?
And also, is there a way to get the FS2 HUD coler-sceme? I only can chose those from FS1?

Go to nVidia.com and update your video card drivers,and use the suggested 3.6.10 build in my signature. Get Launcher 5.5d, also from my sig.

If you mean that the ships look sort of like zebras, it is indeed caused by certain Nvidia drivers. Which is partially why there is a stickied thread on this board warning people about those drivers. Updating them should fix it.
And also, is there a way to get the FS2 HUD coler-sceme? I only can chose those from FS1?
This part eluded me quite well. If you want to change the colour of the HUD, it can be done from the in-game settings. There are a couple of presets and I think you can even customize the colours, within certain limits.

Un "Options", click the "HUD" button. Select parts of the HUD and change the colors.

Ok in the hud color options, click select all on the bottom and use the scrollers on the left to change the color of your entire hud.
