How exactly is it inferior? Jagged edges? Seemingly lower quality textures? Or is there something that looks completely out of place?

If all graphics elements work, I wouldn't try downgrading drivers as a first choice. Theoretically the image quality should remain mostly the same regardless of the GPU you use (just the rendering frame rate would change, using same settings). Check things like image quality, optimizations, anisothropic filtering and anti-aliasing settings before. And make sure you've maxed your settings in the FS2_Open itself.

Did you completely remove all traces of the Nvida drivers before installing the new card?  Also make sure it didn't revert to D3D or something crazy like that.

Screenshot might help a lot here too, of what specifically looks wrong for you.
