So I noticed that when you install FSO, you get 3 different versions of Fred 2; Fred 2 Open 3.6.9, Fred 2 Open Trunk D, and Fred 2 Open Trunk R? Whats the difference between them all? Is one more stable than the other? Is one "better"? Thanks for the help.

Probably depends on the situation. 3.6.10's are always fun. But Trunk D is a debug version, so don't use it unless you are specifically trying to track down a bug.

So Trunk R is the 3.6.10 version? Is it stable?

Both Trunk builds are 3.6.10 version. One is debug and one is release. 3.6.10 is pretty stable but the problem is 3.6.10 official isn't out yet so many people are still playing on 3.6.9. So which one you choose depends on how long it's going to take you to finish. For a single mission 3.6.9 might be safer as you'd get a wider audience.

I also noticed 3.6.10 has some new featuers I am not familiar with such as gravity. Is there online documentation for these new features?

I don't think gravity has been implemented yet. The rest you can find in the Wiki at the top of the page. There is also an option in the launcher under dev tool that will output the sexps and their description to a file.
