Bit of a silly question really but are there any legal ramifications in using someone else's music in a FS2 mission.
I assume because the missions/mods isn't made for profit then there shouldn't be any problem as long as the credit is giving where it's due? Does anyone know for certain?

It's been done before; most, nearly all new music in released stuff is copyrighted by someone.

Haven't a lot of people been using music from Final Fantasy?

It really depends on the situation.
For example: There was a Star Wars mod for Battlefield that has SW in the name and used SW music, they had remove both because LusasArts noticed and it was to similar to Battlefront 2.
I seriously doubt there will be any good space sims coming out soon, so I wouldn't worry about that too much.

Yeah thats what i thought. I doubt the composers that I have in mind are going to play a campaign i make anytime soon :p

Well you're not making a profit so there's no harm done :)
I use music from www.freeplaymusic.com just in case though, it's all free-rights music so I can use it wherever I want without having to worry

Theoretically, as long as it's non-profit it should be OK.
The one thing I'm iffy about is I intend to use Nightwish's "Eva" for a credits cutscene. That might fall into a gray area.

Pretty much this. It's technically a violation of copyright, but I severely doubt that anyone's ever going to bug you about it.

Please note that Axem used excerpts and not actually the full tracks. There's a big difference.
Think about YouTube - posting episodes in parts is allowed. I remember the site purging(or, at least, questioning the presence of) several videos from Italian shows coming straight from Berlusconi's channels. Only "modified" videos are allowed now. By "modified" I mean somewhat altered. Adding your name to the video and/or anything else that makes it unique is acceptable while posting the "raw" video is not.
Speaking of soundtracks, cutting one into several parts(to match FS' requirements) is more forgivable than using the pure soundtrack via SEXP.
