Just trying to record some gameplay and upload it to YouTube in HD to show to my friends. Only recording programs I know of is Fraps, which crashes when I try to record, and Xfire, which doesnt' support FS2.

Xfire does support FS2. It's just not enabled.
Enable it yourself by hacking the games.ini, and you can record with it.

I tried FRAPS and it did not work well with FS2... on a quad core with GTX 8800m.\
Debut video capture is free and at least got me about 30-35 fps using mp4 mode, with
a decent sized file.

Ehhh... I'll just stick with my current version. I don't want to have to go through all the steps again and download more MediaVPs.

I spy with my sexy eye something beginning with "c".
Build != MediaVPs. The MediaVPs are a collection of updated resources, mainly graphics. Builds are versions of the FSO game engine.
Getting FSO 3.6.10 RC2 would basically be
- downloading RC2
- punching the .exe files to \freespace2\
- setting the Launcher to use the new fs2_open_3_6_10_RC2.exe
- being happy.

You don't need to download new MediaVPs. The 3.6.10 RC2 executable is about, what, ten megabytes? It's just a new version of the game engine.
Stick with your current one and you're at risk for crashes and incompatibilities!

I launched Freespace 2 and Xfire doesn't say I'm playing Freespace. Launching Freespace launches Freespace, not Freespace 2... what could I be doing wrong?

Hm...you have both installed. That might throw a wrench into things, though the ini file should be overwriting the FreeSpace 1 entry with FreeSpace 2.
You could splice the dev_games.ini entry into games.ini, but you'd have to edit it every time Xfire updates.
First though, make sure the exe you're running from the launcher and the one in the ini are the same.

Just to clarify: your FS_O launcher is set to "fs2_open_3_6_10_RC2.exe" and not anything else, right?

Directory is C:\Program Files (x86)\GOG.com\Freespace 2\fs2_open_3_6_10.exe.
Also, does the new.... uhhh... 3.6.10 RC2 not support 3D shockwaves?

No, it supports them.
As for your problem: you have 3.6.10 RC2 set up with Xfire, but you're only using 3.6.10 (not the RC2). You need to hit 'browse' and select 3.6.10 RC2 (not the debug version.)

Both of which are unfavourable options, at least for me.
But yeah, ARMEDnPISSED, the exe has to be switched from "fs2_open_3_6_10.exe" to "fs2_open_3_6_10_RC2.exe".
Also, IIRC, 3.6.10 has an option for enabling/disabling 3D shockwaves or something.

Okay, I switched it to C:\Program Files (x86)\GOG.com\Freespace 2\fs2_open_3_6_10_RC2.exe but still not working. I launched through Xfire, which once again, launched Freespace. Xfire doesn't detect when double clicking through fs2_open_3_6_10_RC2.exe. Launching through the launcher has the same effect as the latter.

I've been thinking about infraview lately in my desire to do "Let's Play"s of various FS campaigns, but admittedly that's because I want to do screenshot-based.

Free... It works unless you've "got" to have a FPS counter.
Using the FPS counter in debug mode looks more professional anyway.

When you do the recording, try out the time expansion trick.
