Title: I don't get it why I can't edit Root_fs2.vp files.

I can't edit it, because when I change a single character, or probably even put a single more space, the game can't run. I am extremely excited since I can finally mod the game myself, but apparently, I can't.

Is it really not meant to be changed?? Or are there other files interferring with it?? Help would be appreciated  :)

No, the root_fs2.vp and the other retail vp files should not be altered. Reasons are:
1. Until you gain experience, and really know what you are doing, altering vp files is dangerous and will lead to suffering.
2. Altering the retail vp files (especially root_fs2.vp) will cause trouble in multiplayer; at best, your stats won't save, at worst, you'll crash
3. If you want to explore the vps, the right way to do it is to extract the contents into a mod directory in your fs2 directory, make the changes you want, select that as a mod in the Launcher, and play it. That way you can easily make changes without having to mess with vps; that should only be done once you are ready to release your mod to the public.

Also note that you need a VP editor, like VPMage or maja, to work with vp files.

Well, The E gave excellent advice on how to mess around with the VPs without making your FS2 die.
