As you can see, I can make screenshots until I go to the mission simulator and load a mission, then they are only those dark blue and black things. Any ideas?

Yes. Please, please, please make a log WITHOUT the +parse option. That one is impossible to read.
EDIT: Does the same issue appear if you use the -no_glsl option?

Eh, why? And how do I that? Enabling "Disable parsing errors" in the troubleshoot tab?

Because your current log is hideous.
Apparently there is a debug_filter.cfg in your \freespace2\data\ folder. Either remove it entirely, or open it up and remove "+parse" from it.

Okay, done (I now use the .cfg that The_E recently posted in the SF I and II release thread) and re-uploaded fs2_open.log. See the link above.
