EDIT

I appreciate the effort, but could you please just contribute to this list on the Wiki (http://www.hard-light.net/wiki/index.php/Category:User-made_Ships) rather than start another incomplete one?
-
oh, didn't know about that.
thanks then.

It would be great to have someone actively contributing to that list, it's pretty extensive but far from complete.
Also, there's the FreeSpace Universal Reference Project Ship Database (http://fsurp.hard-light.net/database/fsships.html) which is largely out of date but still potentially useful.

Aside from myself, I don't think anyone has really bothered to add ships to the Wiki unless they're actively involved in a mod featuring those same vessels.
There is also of course the page I helped create, but it's not easy to edit:
http://www.hard-light.net/wiki/index.php/User-made_Ships (http://www.hard-light.net/wiki/index.php/User-made_Ships)
I would venture however that it's organized in a much more useful and aesthetic fashion.

That's the one that I generally use and prefer.
