Is there a particular reason we can't use [ img] [ /img] codes in our signature?

Yep.  People find image sigs annoying and distracting. Basically, HLP is about the content of your posts, not the contents of your signature. Same reason applies to why you can't add custom avatar images unless you are an admin.
