Hi,
I have followed every yellow step on http://www.hard-light.net/forums/index.php?topic=78710.0 but when I use the Launcher to use fs2_open_3_6_16_NO-SSE I just recieve an error "Failed EnumAdapterModes in UpdateAntialiasList".
Have anyone encountered this before?

That is one pretty specific and unusual error.
1) Any specific reason you're using a no sse build ? Unless you're using a Pentium III or older, there is no reason to not use normal builds.
2) Please post a debug log (http://www.hard-light.net/forums/index.php?topic=56279.msg1180359#msg1180359).

1. No real reason, I used this one this time, same result. fs2_open_3_6_16.exe
2. Here is the result. It keeps complaining that I cannot set graphics mode aswell.

That is not the debug log. Please follow the instructions I linked to to the letter. You're looking for the fs2_open.log in your data folder, not the content of the pop-ups.

Oh, my bad. I actually found another thread here that discussed the exact same issue I was having. They said that the launcher is not compatible with windows 8, so i tried to use the wxLauncer instead. It crashes aswell so here is the logfile from that.

This is not FS2. I think it might be FS1. If you want to play FS1 with the FSO engine, what you're looking for is FSPort (http://www.hard-light.net/forums/index.php?board=39.0). You cannot run FS1 directly with any FS2 or FSO engine, they're not the same engine nor same data formats (although quite close). It just won't work as-is, which is why we have FSPort.
A correct FS2 install is supposed to look like this:
