Is it ever stated anywhere which species are the main inhabitants of each system owned by the GTVA?

in short no. educated guesses can be made but it is not explicitly said anywhere beyond a few systems.
the most comprehensive list made is http://www.hard-light.net/wiki/index.php/FREDZone_Fleet_Organization but again this is pure conjecture where not confirmed in canon somewhere.
personally I like it as a base, it makes a number of reasonable assumptions, but then there are some bits I dont agree with for my own interpretations.

Were there ever any cutscenes with info on which system belong to which species?
Vasuda Prime, Sol and a couple others had definite info on who lives there.

The first map I linked, should be (as per the full page, second link) set as per the beginning of the Great War. Red being Vasudan, green being GTA.
But I think it still comes back to several assumptions.
Comparing to the FS1 map, systems behind Vasuda that are not directly linked to any GTA system (assuming Polaris, Epsilon Pegasi are not yet discovered/explored/inhabited. Would possibly be Vasudan controlled, same for the GTA for systems behind Beta Aquilae.
Hmm, I personally wonder if there is another node leading out of Ross 128 and Ikeya, the Shivans must have come in from somewhere... (by FS2, Laramis to Dubhe are on the map as controlled so I'm assuming the Shivans did not travel through there, probably never know...)

If we assume that Vasudan phisiology can tolerate human enviroment and men Vasudan env., it would be really hard to tell where's Vasudan or Terran system simply because there would live both races on habitable worlds. So we would rather depend on the species in majority in the system. It is obvious that in the systems on the "Vasudan" site of T-V front would be more Vasudans.
Still, there are more factors, like people on installations, fleets ect. which could make the population of both races dependant only on events having place in a campaign.

It is possible that the small Shivan fleet in FS1 was dormant inside t-v dominated systems, only to be awaken by idiots that thought they would be uncovering technological breakthroughs.

On that topic, about anything you want and its kitchen sink is possible.

I'm pretty certain that the following systems do belong to their respective races:
Terran Systems: Sol, Delta Serpentis, Beta Aquilae, Capella, Polaris, Regulus, Sirius, Epsilon Pegasi, Ross 128.
Vasudan Systems: Vasuda, Deneb, Aldebaraan, Alpha Centauri, Altair.
I'm not so certain on which side Vega, Antares, Beta Cygni, Betelgeuse, Ribos and Ikeya were originally on, because Vega could've been originally Terran before it was taken over by Vasudans and Antares and the other 4 systems only accessible through it could've been Vasudan territory before the Terrans began to invade them.

the Bastion was based in Vega so while it is far from canon its a justifiable suggestion that the system is Terran

Or was under Terran control by the time FS1 takes place, which could also mean it's a Vasudan system that was occupied by the Terrans during that part of the conflict.

I think that Ribos is also a terran system. Because Tombaugh was there, and because it had a reputation of a Fortress it seems that this station successfully repelled vasudan attacks for many years.
And so i think Ikeya is also terran, because it is very unlikely that the Vasudans were able to control a system that was cutoff from the main vasudan territory.

Were Procyon and Adhara canon GTVA systems or just introduced for "Procyon Insurgency"?
I would imagine Procyon would be Vasudan and Adhara Terran (it was said the Vasudan-led insurgency in PI started in Procyon but also gained support from some Terrans).

They're both canon systems. Adhara in particular appears to be Terran.
