Title: How do I get the Warthog HOTAS to function with Freespace 2 Open?

I'm out of ideas on what to do. The game just won't register any of the buttons on the joystick or throttle. It doesn't even register any movement of either either. It only listens when I press a key on the keyboard, which is not what I want at all.

Make sure you have selected right joystick in launcher.
  Do you see your warthog in Windows gaming devices?

Anyway,  for mapping joystick buttons I use SVmapper to link buttons to keys.
For binding my joystick+throttle+pedal axis I use Joystick Curves

Following your advice, I've got almost everything working. The only thing strange is that my throttle seems to be set to roll my ship and not affect my speed. How do I fix that?

Edit: Solved the problem, but another one has cropped up. There's a massive deadzone in the joystick that makes fine movements impossible. How do I eliminate it or at least reduce it?

Edit 2: Just had to tweak the in-game options. I think I've got everything under control! Thank you for your help!

Glad you have sorted everything out.
Would also advise trackir/freetrack in conjunction with cockpit mod for 100% enjoyment. Freespace Open is still best combat sim,  with right gear it's tons of pleasure.)
