1. which ships in basic freespace 2 have this lovely feature?

2. how exactly do I enable it?

I don't think any retail FS2 ships have glide. If you add the flag to the ships.tbl or a .tbm (see the Wiki):

$Glide: Yesand then press Alt-G in-game you can use glide. Of course, if you have FSO.

 
However, ships do have Sideway Thrusters, like the Mara. They are activated using Shift+1 and Shift+3.

There is also a mod out there (Realflight - Look it up on FSMods) that gives a few ships glide capability, as well as side thrusters.

thank you very much, I just enjoy the game so much more when I am in a gliding fighter. which, is probably mildly cheaty, but, the dynamic of gliding is just, fun.

Play Tachyon then, glide+latting is pretty much required if you plan on surviving multiplayer.

okay, I finally got everything working, tried this, and no success.

so, am I doin it wrong?

okay, I finally got everything working, tried this, and no success.

so, am I doin it wrong?

Use the code tag in the post box and give us a look at your ships.tbl entry.

IIRC, AI ships do not take advantage of gliding when it is enabled.

The player ship can use it, just make sure it's bound to a key in the options menu. I think it is Alt-G by default, but you might check just to be sure.

Don't the Shivans make use of it? Or is it only the directional thrust they use.

I believe so. Try using a Morning Star on a Shivan fighter. They tend to accelerate angled away from 12 o'clock.
