Setting player to NOT be Alpha1
In an FS1 FRED mission I'm trying to label the player's wing as something other than Alpha, Beta, or Gamma and have the wing appear on the Wingmen HUD window. I've seen this done in the campaign Phantoms, but I couldn't figure out how to do it myself. Is this possible with just Fredding, or is the process more complex?

You need to go into the mission specs editor and change the starting wing names.
No-one ever listens to Zathras. Quite mad, they say. It is good that Zathras does not mind. He's even grown to like it. Oh yes. -Zathras

Indeed.  You'll have to make sure they match up manually though, so be wary of typos.

Re: Setting player to NOT be Alpha1
To do it in FS1 or stock FS2 you need to set the mission to multiplayer after the wing has been formed, then set whatever ship you want the player to be in as a player ship, and un-check that same option from Alpha 1, then set the mission back to single player. You will get 2-4 errors every time you save the mission, but as long as the player is in one for he 5 standard wings, the game will run it fine.

In VI, which is FS1 (FSPort 3.6.12), I don't have to do any of this. All that is required to do this is to create custom wing names in the mission specs editor.

Or are you talking about how to do it using retail FS1?
I, Aries one, have proved myself superior to the legendary Terran pilot Alpha one! Let the Vasudan people take pride in this accomplishment, and take the Parliamentary Vasudan Empire to victory over the inferior Galactic Terran Alliance! Long live the Emperor!

That's because you're not using FS1 or stock FS2. Look at the first sentence of Hippo's post.
