Water Skiing.  Specifically Slalom water skiing, once you learn how to do it with a single ski two skis just doesn't cut it any more.  Fun as hell to carve back and forth across the water kicking up a giant rooster tail.  Bit of a lost art though, nowadays most folks go for wake boarding, or for the talentless flopping around on a tube.

Slalom skiing and wake boarding are essentially different animals.  Slalom skiing is done with the boat at close to it maximum speed when the wake is relatively small, and its done with essentially a single water ski that has a holster in the back for your other foot.  Its very fast and your looking to cut back in forth across the wake as smoothly as possible.  Wake boarding you want the boat going at a more medium speed enough to pull you out of the water but slow enough to have a giant wake.  The equipment is essentially similar to a snow board and your looking to nail sick jumps over the boats wake.
