Does it work this way?
Can you have a fighter in freespace with four engines, and when say subsystem engine01 gets shot out, then the engine connected with that subsystem gets shutoff graphically (the glow and thruster model don't show) and if the fighter has 4 engines, then its speed would be reduced to 3/4ths? I'm kinda curious if it works this way, or if it can work this way.

It sort of works that way for capships, although only in slowing them down.  Getting the proper thruster plumes to go off for engines is something that is supposedly in the works as an eventuality.  Fighters only have one engine subsystem, and there isn't much that can be done about giving them more.  Plus, you never actually see them damaged anyway before the fighter is destroyed.
