Where could I find the tables for retail craft so I could mod them? Example: if I want to change the Hercs available loadout, where would I go to do that?

In ships.tbl. You'll need to extract it from the core VPs using VPView or VPMage or what not.

Don`t think modular tables will work on retail fs2.
Thats only if you are using retail.

You need a VP tool liek VP view then extract the ships.tbl to your directory and then you can modify it.
