Okay, I have two problems.

1) I recently reformatted my hard drive to install Windows 7. I'd played FS2 (including the SCP) on both Vista and XP without trouble. I downloaded the SCP, and installed it into my FS2 directory. When I try to run the game though, nothing happens. I get a process in the task manager, but nothing else, not even an error message. I'd followed "The idiot's guide to installing FS2 Open", so theoretically making a mistake should have been difficult, even if I AM an idiot.

2) I did however install The Babylon Project (which is stand-alone), and that runs just fine. Except, my joystick won't work. When I go into "Devices" in control panel, I'm able to test the joystick there and it works fine. I'm using a Saitek ST90, which worked fine in Vista and XP.

Has anyone else encountered these problems with windows 7?

I have no issues running the game on Win 7 x64 here, and I know of several other guys who got it to work on their systems.

If you have installed the game to C:\Program Files\, can you move it to another directory and try to start it there?
Have you tried the compatibility options (they shouldn't be needed, but you never know)?
Can you try to run a debug build of the engine?
If the debug build runs, look if it writes the fs2_open.log file in the data folder. If that file is present, please post it here.

Well I redid the install, and it seems to run just fine. The only thing I changed in the meantime was an option in NVIDIA control panel to resize my older programs to get rid of the annoying black bars on the sides of the screen that people often get with Windows 7.

Soooo I must have screwed up the initial installation in all probability  . Thanks for your response though!
