Seriously though - this is an awesome project. I used to be fairly big in the I-War community and I'm scrambling right now to try and find any old media I can to help out.
There is one thing I did find...

This is from a long-lost folder parked around the depths of my hard drive. The accompanying readme file says as follows:

These are the models dreadnaught_high.lwo and dreadnaught_low.lwo, originally created by Craig A Clarke, converted from Lightwave to .3ds format with his permission. The conversion process leaves no texture coordinates on the models, so these models are untextured. I've included his original documentation in the zip for copyright and historical value. Enjoy!

From cross-checking a couple of things as well I don't think this is 100% official, but rather the results of a third-party recreation effort from way back.

sworn I had a high-def CNV-301 schematic kicking around somewhere, and right now I'm utterly ashamed as a nerd that I can't find it.
Edit - God, I'm sorry - I just realized you're primarily looking for reference materials for other ships as well. I'll let you know if I happen to find anything regardless.
