Question on the growth of fish...
For all you biologist. 

We got this small (not young) albino catfish from a friend that had been couped up in a fish tank for over 2 years and stayed at a small size when we had him for another 2 years.  We then sold him to my Aunt who raises Koi, she has a pretty large size pond and only after a year and a half it's almost tripled in size from 4-5" to 18-19". 

Why is that? 

is it an environmental trigger?

Yeah, they seem to be able to adjust to their environment's size.

I remember catching creek chubs from the streams that run by my house and putting them in a tank.  Over time the fish would actually shrink.

I can't seem to remember if I noticed the same thing in crayfish.

Yeah, they seem to be able to adjust to their environment's size.

I grew up in the wonderful, funderful mountains of Eastern Kentucky.  I spend most of my time at school now though, which I guess you could say is in Central/Northern KY.

Most fish species grow proportionately to their available food supply and environment.  It's a genetic trigger attached to growth factors.  The precise mechanism is not yet understood.

Rinse catfish fillets. Mix cornmeal with Cajun seasoning. In a shallow bowl mix milk, eggs and mustard. Dip catfish fillets in egg mixture then coat well with cornmeal mixture. Work cornmeal mixture into fillets with hands to coat well. Heat vegetable oil in a heavy skillet to 375 degrees. Fry fillets, 2-3 at a time in hot vegetable oil, turning once. Serve immediately. Serves 4.
