Me too, it's really good with that sweet mustard sauce.
But more importantly it would give us a way to feed people on Earth, if we could figure out some way to get it back here.
It would also make for some great science fiction...
"Sam had long dreamed of making his way to the Asparagus colonies of Mars. It had taken him nine years, hard work, and a significant portion of his life savings to earn passage on the space liner - but here he finally was. He closed his eyes and lay back in the soft chair. He could almost see it now - the towering stalks of Asparagus, swaying slowly in the shallow atmosphere of Mars, a healthy green beneath the warm red tint of the sky. He'd managed to haggle a sizable plot of land, with a space bubble big enough for a small family. His kids, too, would grow up to be famous Asparagus farmers, taking their father's of Empire of green gold to Venus, possibly even Mercury."
