If any of you haven't checked this out, it's a good find.  Free demo is available, it's expected to be in Early Access for at least a year longer, but it's very playable.
The gameplay loop scratches the same itch as Subnautica does in my experience.

I played the demo! It's a really solid crafting-exploration game. I like the part with the boat.

Ah, bonus, if what I saw from a streamer is correct, your Demo save works in the EA full release.  That may or may not always work though as updates etc drop.  But maybe!  Yeah the boat is really cool.  Apparently there's a whole ton of hidden resource stashes in the starting area that you can clear out.  Like insane amounts
