Actually the reasons behind this are not due to there being a huge number of fan boys in the UK (although that did help) but was more due to people being unhappy that their was a question on the census asking for everyones religion.
Since the census is an official document (and isn`t anonomous) many brits weren`t happy about a government document stating what religion they followed.
What made this worse was that since BY LAW you have to fill out the census and therefore can`t leave fields blank.
The news got round on the net that some rabid Star Wars fans were planning to put down Jedi as their religion and basically rather than risk a fine everyone who had a problem with that question put down Jedi Knight on the grounds that if enough people put the same nonsense answer the government wouldn`t be able to do anything about it
