As in, the ability to go straight up, backwards, and side to side, just like RL.
Also, the ships have a slower turning and roll rate.

.tbl editing, I've already figured out how, and, in fact, I've already tested it, and it works.

You have obviously mistaken the meaning of "real physics"

Real physics is a few things, here's the broad meaning:
1. Puts in use gravity
2. When a ship is flying in one direction, it keeps moving in that direction even when it turns unless it is applying forward force.(think I-War2)

The FS2 engine supports neither of these, so "Real Physics" doesn't compute
