Three conditions there be for cockpit view:
1. The ship must have a cockpit modelled in it (with one notable exception to rule being GVF Serapis, which looks kinda cool even without actual cockpit modelled into it).
2. The viewpoint must be located so in the model that the cockpit bars and stuff doesn not obscure the forward view and make, you know, playing impossible.
3. The ship table must have a flag "show ship" in table entry. This is easiest to do with modular cockpits-shp.tbm file.
The best ships with cockpit are IMO the Hercules, Herc II, Ares, Perseus (? don't remember how that one looks currently), Ursa (after moving the viewpoint to forward cockpit), Trashman's Athena, this Zeus (excellent work by the way) and I'm assuming that once the Valkyrie model gets done it will be all right. I haven't checked how the Apollo looks like with cockpit view. If I remember correctly, the black opaque HUD panel obstructed the view in it, but since this new cockpit map seems to have proper transparent HUD screen it may be worth a try...
Medusa kinda works too, if you don't mind having somewhat obstructed views, but Pegasos and Erinyes have way too obstructive views forward. AT least the last time I cheked them out.
