Everyone should just do the training missions. Fs2 is one of the games that has great simplified training missions spread throughout most of the game. Yes in the training mission where they teach you to dodge missiles you still get commended even if you don't dodge any, but it's to get you a basic know how and feel for what's it's like to dodge missiles. When you actually try to dodge missiles in the real game utilizing the basic **** in that training mission, you'll usually find it's easier than having continual missiles lobbed at you in that training mission. And if you still can't dodge missiles, i'd say you didn't really try very well in the training mission.
My favorite way to dodge missiles is to take them head on, and roll my craft going for it, until the last moment where i turn away with burners. Works like a charm when you learn to do it right. It's more of a daredevil maneuver.
After that there's another way to dodge a missile head on. It's where you go for the missile head on yet again pulling your craft into a roll, and pull on your burners still rolling and you sort of spin around the missile while it just goes passed you. This one's a lot harder, i use to be super good at it, but not anymore, of course it's my more fun way of dodging missiles, but you get the idea.
I like taking missiles head on because you can actually see them and do better coordinated dodging maneuvers without countermeasures. Hell, dodging a missile head on you can't use countermeasures for that, just try it, you might like it, and it will increase your skill in dodging missiles.
