Ok, so I decided to try out all these cool mods for one of my favorites games ever!
When I first got everything set up and ran the game at fullscreen 1900x1200, the screen was garbled to the point that you could make out the basic interface (buttons, windows, etc) but not text or fine details.
So I exited and changed to the next highest resolution (1900x1080) and it worked fine. So, I continued to play some missions of fsopen. Wow, great work on that by the way, looks and plays better than I remember the original!
But anyway, it was nagging me. Why did it look funky at 1900x1200 and not anything lower? I tried taking a screenshot, and it looked fine at 1900x1200. Messed with all the video options, etc.
Finally, I was looking through the nvidia control panel and decided to try changing the scaling settings. I changed it from using the display's built in scaling to the Nvidia scaling. Sure enough, that fixed it. Not sure why it was freaking out, my desktop is the same resolution and color depth as I had the freespace launcher set to use, but there you go.
So this is probably a really specific problem, but maybe someone else has had or will have it, and I will have posted a solution.

Nvidia Drivers 178.13
GeForce 9800 GTX & nForce 780a onboard in Hybrid SLI performance mode (Side Note: The problem did not occur in Hybrid SLI power saving mode, which means the onboard graphics were doing all the work)
