I kind of remember seeing some kind of video or cutscene before that involved a Vasudan in some kind of hand to hand combat with a Terran.

If I rememeber correctly the scene was just like the one shown in the techroom of a Vasudan walking around on a flat grey floor except there was a Terran there as well and they were fighting.

I don't know if it was fan-made or if it was something Volition actually released at some point.

If any of you know what I'm talking about, would you happen to know where I can find this video/cutscene?

It did.  That video was in an extras folder on the Silent Threat disk, along with the Terran-Vasudan shoving match (and another which was featured prominently in ST:R).
