I have a Saitek Cyborg Evo joystick, and am unable to figure out how to bind the left and right roll functions. Any help is greatly appreciated. Ty!

Under the Ship section of the Control Config in the Options menu, you should be able to just click on the "Bank Axis" option and twist your joystick left and right to set it.  You might need to move the throttle to the middle position beforehand, since the game may be picking it up as the active axis.

Yeah. Bank left and Bank right are button controls; you cannot bind axis on them, but keys and/or joystick buttons instead.

Like Mongoose said, you need to locate the simple "Bank Axis" control, which is lower on the Ship controls list. That should allow you to bind the axis you want to it (presumably the twist handle).
There are three things that last forever: Abort, Retry, Fail - and the greatest of these is Fail.

On a side note, I loaded up Vanilla FS2, and bank worked fine, no binding needed.

Try shutting down FSO, the Launcher, and everything.  Then do this:

1) Activate your joystick and make sure it's working by checking in the control panel.
2) Start the launcher, go to the joystick tab, and make sure it's selected.
3) Start FSO and create a new pilot.
4) Fly a mission and see if the control is bound.  If not, go back to the options screen and bind it.
