Update on Scotchy's Galaxy Class........
The Wrath of Khan was a good movie regardless.  remember that in this same movie with the exposed bridges on the ships and Khan somehow knowing a klingon saying, Kirk manages to shout so loud that you can hear him in the vaccum as they do a zoom out shot of the planet.

KHAN!!!!

Khan!!!

khan!!!!!

Then again, if you can hear phasers and photon torpedoes in the vacum of space (not possible),  I think his screams would be audible as well. He must have a mighty set of lungs.

Update on Scotchy's Galaxy Class........
seems everyone forgets that the Galaxy class has a battle bridge tucked away in more protected areas... the main bridge would be similar to an observation bridge

The Enterprise seldom had to initiate saucer-separation, but it certainly happened on more than one occasion prior to the movie.  The instance that most readily comes to mind is the episode with the Echo-Papa-607 supercomputer; I seem to recall the saucer separating during one of the battles against the Borg, as well.

And yeah, I'm a geek.

Edit: For those of you questioning the perils of an exposed bridge, look no further than The Wrath of Khan.  The Enterprise pummels the crap out of the Reliant, firing directly on the bridge on two occasions: on the first, the character heavily-implied to be Khan's son is killed, while on the second, Khan himself is gruesomely wounded.
What about when they were being chased by the Crystal Entity?

I don't remember the ships to be vulnerable to the Crystal Entity, as it seemed to be unable to penetrate shielding.  The saucer did seperate in the first encounter with the Borg, though, and it was noted that the borg seemed to ignore the saucer but attack the engineering hull, presumably because more of the crew was on the saucer and it could not escape, allowing easy (presumably) assimilation.

The saucer was separated and asked to return to the nearest Star Base because the situation had become very dangerous.

Update on Scotchy's Galaxy Class........
hrm...regarding keeping the two sections as two docked ships, it IS feasible if its just set in FRED manually so that if one goes boom WHILE the Galaxy is in one piece, the other half blows up with it. Especially if the half that's going boom is the engineering section where that wonderfully volatile antimatter warp core is...

And regarding docking, since its VERY rare for a starship to dock airlock-to-airlock with another ship, keeping the two sections of the ship docked together won't cause problems with the "more than one ship needing to dock", because YOU HAVE *TRANSPORTERS*! In Star Trek, capital ships NEVER dock with each other, so having the two Galaxy class sections docked all the time works...

All this Galaxy class needs is a few designated Fighter*COUGH*Shuttlebays, the ability to launch craft from those Shuttlebays, and an SCP-added tractor beam.

Kind of a funny decision to make though, as the Saucer lacks a warp drive. Only ship that has multiple warp drives is the Prometheus, IIRC.

Update on Scotchy's Galaxy Class........
I'd suggest that one model be created that has both the saucer and drive sections in one, then have additional separate models created for the drive and saucer.  You'd use the single model version most of the time, but if you needed to separate as part of mission events, just give the unified version a specific departure time and location with no warp effect.  Then have the stardrive and saucer sections, docked together, arrive at exactly the same point, at exactly the departure time of the unified version, then tell them to undock right afterwords.  The only potential problem with this is transfering potential hull and subsystem dammage.
