In The original Doom yes, in Doom 2 the last boos is a bit...bigger

Indeed, but there is also a severed head behind the demon spitting wall (not sure if you can get to it without using the no clipping cheat, I think it is, not sure) which will end the game if you shoot it.

and those brain guys with the chain guns weren't bosses.  I think they were in the first one, but in the second they would all hang out killing each other

Thats one thing I loved about DOOM.  They would attack each other if provoked.

You had to pump rockets into the demon spitting wall's brain

Letting some Demons chase you into a load of imps was always fun to watch. And unleashing a rocket into the midst of a huge crowd of zombies is just as gratifying today

Halo is probably the only game that even start to recapture that 'horde' feeling, but in my opinion there is less thinking involved in Halo, sometimes in Doom you would have to plan out your attack on a Baron or the like very carefully, or try to draw him into a fight with other creatures.
