I know architectural stuff benefits from it, as does media creation. I doubt he's doing the latter though, with those cards :D

keep in mind i didn't get these video cards for gaming; i got them for opening Excel documents with 85 columns (which answers your question Fragrag) and for just using Windows.

It is pretty handy though... for instance, having Outlook and all my email windows open on one screen, RDP to a server on the other screen, and network monitoring tools and cameras open on the third screen.  didn't take me long at all to get used to.

I could use three screens (or two larger ones) at work. A pair of 19" TFTs doesn't seem so large after a year. Screen space is like disk space; you WILL fill it, and you WILL eventually need more.

Three Explorer windows, five SciTE windows, a PowerShell window, a CMD window, and two or three Remote Desktops each containing an average of two PowerShell windows and an Explorer window. I need a few of those huge 24" widescreens, and a decent keyboard and mouse (where 'decent' is defined as 'Dvorak-layout Model M and Logitech MX1000', the same setup as I have at home).

I tend to use 3 screens - albeit it on 3 machines - at work.  Internal/client running(laptop), Eclipse (desktop - which is a rather snazzy quadcore one), and network simulation/compilation (creaky Solaris box)

If we include other machines, yeah, I use three. One's on my personal machine (a Tablet PC) which I use for IRC, IM and general own-time web browsing. The company doesn't much mind us taking irregular breaks throughout the day, considering it better to get 7 hours of useful work instead of 8 hours of crap.

Virtually all the dev machines have two screens. It's a requirement these days, when coding, to have plenty screen real-estate.

I want to "invest" in a 9-screen setup... how about 9 20.1" Widescreen LCD's on a 5ms (or less) response... 1000:1 contrast...  ;7

Cool setup. It looks like some color calibration is needed there though. The image on the left looks slightly off compared to the other two.

I do occasionally wish I had multiple monitors. I rarely do stuff that benefits from them, but it feels very obvious when you start running short on screen space. I have several monitors around the house but they're all on different machines. :p

As for games, you won't be able to run games on 3+ monitors unless they're specifically designed for it, which is limited to a few flight sims at the moment (the upcoming Supreme Commander is supposed to support it though). You can play most things on two monitors since they can run off the same video card, but the view is cut down the middle so it's not very useful for first person games.

I bet they are TNs if they're rated at 5ms. :p I would much rather have a smaller number of glossy IPS screens.
