There's only one thing better than old space games on GoG...
And that's MOAR SPACE GAMES ON GOG! - Specifically, Xwing and TIEFighter - which is great news.

I have the X-Wing Collectors Edition CD - but always sucked far too badly to beat it.

Perhaps I'll have to try again with a better stick and several years of actually getting worse at games.

GOG generally has the manual included somewhere.

What? All games have the manuals in the download list, clear as day, along with other goodies like quick reference sheets, concept art, soundtracks, etcetera.

In which I threw down $26 as soon as I could because trolololo money.

So both of the titles seem to show up as two separate versions in my library...should I be looking at the original '94 releases, or the updated '98 versions?

Yes. :P

The original releases are run through DOSBox; if you want to use more than 2 joystick buttons, you'll need to map your joystick buttons to the appropriate keyboard controls. The '98 versions have full-blown control-setting menus, but don't have the dynamic soundtracks of the DOS versions. It's entirely a matter of personal preference which version you should run... hence why they give you both.

Something like this actually exists. There's a TIE Fighter Total Conversion mod for X-Wing Alliance, for which you can also use the upgraded assets from the xwaupgrade site. Though as far as I remember balancing was an issue:

Xwing Vs Tiefighter had a Windows updated EXE that worked the last time I checked (XP).

Can't speak about xwing and tiefighter, but xwing alliance did and I thought it was good.
